Spinach Souffle

2T butter2T flour1 c milkpinch salt and pepper3 egg yolks10 oz frozen spinach, thawed and squeezed dry1/3c parmesan cheese1/4c diced onion3 egg whites
Melt butter and stir in diced onion. Saute until translucent. stir in flour in a saucepan over medium heat. Stir in milk and season with salt and pepper. Stir until thickened. Set aside. Stir in egg yolks, spinach and cheese. Beat egg whites to medium stiff peaks. Fold spinach mixture gently into egg whites. Pour into a greased 1 1/2qt casserole. Place in a hot water bath and bake at 350 for 35 minutes.
