Ingredients
Directions
1 16 oz. package of Trader Joe's "Traditional Pot Roast" (fully cooked and seasoned pot roast)1 can canned tomatoes 2 cups of chicken broth (low sodium)1 cup of sliced (roasted) peppers. I like poblano peppers, but for those who like extra spicy, go for the jalapenos.2 splashes of your favorite hot/pepper sauce1 cup your favorite salsa
This creates 6 servings (a little over 2 oz of protein per serving). If you are hearty eaters, then plan on it serving on 3, maybe 4 people.
Put onions in your dutch oven and spray with Pam--cook until the onions are translucent.
Add the rest of the ingredients in your dutch oven. Cover and cook for two hours on low-med. heat on your stove. Sometimes, I add a little water to make sure there is plenty of moisture. Salt and pepper to taste.
I usually serve this with tortillas, lettuce, tomato to make a delicious burro. Tortillas are not in the nutrient/calorie count of this recipe. It is also excellent with whole pinto beans.
Since the Trader Joe's brand of package roast beef is not an available choice (ingredient), the fat content is shown as higher than it actually is. The fat content is approximately one half per serving as compared to what this automated systems say....so don't fret as long as you get the TJ's brand.
