Parmesan Encrusted Tilapia

Ingredients
2 lbs tilapia fillets1/2 cup Parmesan cheese, grated2 Tb. olive oil2 Tb. light mayo2 Tb. fresh lemon juice1/4 tsp dried basil1/4 tsp ground black pepper1/8 tsp onion powder1/8 tsp celery salt
Directions
1.Preheat oven's broiler. Grease broiling pan or line pan with aluminum foil.
2. Mix cheese, olive oil, butter may and lemon juice in small bowl.
3. Add spices
4. Arrange fillets in single layer and broil a few inches from broiler, 2-3 minutes
5. Flip fillets and broil 2-3 more minutes
6. Remove fillets and cover them with mixture on the top side.
7. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork.

    Delicious and super easy! This one is a keeper! I microwaved the fish for 3 minutes in a 9X13 covered with saran wrap, but vented. Flipped it and microwaved for another 3 minutes. Then broiled on low for about 3 minutes. It came out perfect! I also left out the butter and used dill, not basil. - 7/11/12

    This was really, really good and I would definitely make it again. I enjoyed the taste and so did my boyfriend, and the preparation was very easy. I didn't have celery salt, so used regular. I didn't quite know what 2 lbs was, so I used 4 fillets. Six or Eight might be more appropriate. - 2/7/11
