Spicy Italian White Beans w/ Broccoli and Summer Squash

Ingredients
1 tbsp Extra Virgin Olive Oil3 Cloves Garlic, minced1/2 tsp Red Pepper Flakes1 c. Broccoli, coarsely chopped1 c. Summer Squash, chopped1 c. White Beans (Cannelinni), rinsedSaltPepper
Directions
In a skillet, heat Oil, Garlic and Red Pepper Fakes over Med. heat about 1 minute.

Add Broccoli, Squash and Basil and cook until squash is slightly soft (about 4 min.)

Add beans and cook 1-2 more minutes.

Season to taste with Salt and Black Pepper.

    I enjoyed this! Made it with butternut squash instead (more calories, but oh well) and cooked it for a bit before adding the broccoli. This was delicious and filling (but I ate both servings by myself!). Will be making it again. - 4/8/10
