6 c. well cooked cauliflower, drained2 T. butter6 T. 18% creampinch of salt, pepper (garlic or other spices if you like)for a nice finish, you can top with grated cheddar cheese and broil until golden brown (count extra carbs)
Directions
whip all ingredients until desired consistency (like mashed potatoes)
if you like you may top with grated cheddar cheese and broil until golden brown
