Vegetarian Whole Wheat Couscous Salad

Ingredients
1 cup cooked whole wheat couscous (1/3 cup dry)1 cup diced tomatoes1 cup diced cucumber 1 cup chopped green onions1 cup chopped fresh parsley1 cup cooked lentils or chickpeas (garbanzo beans) 2 cloves crushed garlic1-2 Tbsp chopped fresh mint2 Tbsp Olive or Canola Oil3 Tbsp Balsamic Vinegar1/4 tsp Black Pepper
Directions
Cook and cool couscous as per package directions. I like to cook the garlic along with the couscous - it takes away some of the harshness of raw garlic.
Once couscous is cooled, mix all ingredients together in a large salad bowl.
Chill in the refrigerator for 15-30 minutes to allow flavors to blend.
