tofu egg salad

Ingredients
3 hard boiled, eggs, whites only8 oz extra firm organic tofu1/2 c chopped vidalia onion1/2 c chopped celery1/2 chopped sweet red pepper1/2 c. lite mayo2 tbsp dijon mustard1/4 tsp paprikasalt and pepper to taste
Directions
finely chop egg whites and tofu. Add remaining ingredients and mix well. refrigerate aty least an hour before using to make sandwiches or wraps
