Sesame Adzuki Beans

Ingredients
1/2 cup dry adzuki beans1/4 cup tahini1 Tablespoon soy saucewater for cooking the beans
Directions
Soak the beans overnight in 2 cups of water. Drain off the water and transfer the beans to a saucepan.

Add 1.5 cups water to the beans. Bring to a boil over medium heat. Reduce to a simmer and simmer until the beans are soft (depending on your beans 45 minutes to an hour).

Drain off any remaining water and stir in the tahini and soy sauce.

Serves 4 as a side dish, 2 as a main.

    Loved this. These beans are supposed to be the best for dieters and I'm always wanting more recipies. I used some Trader Joe's asian BBQ sauses intead of the soy sauce. Even better! - 5/27/09
