Walnut, Feta Salad w/ Vinaigrette

Ingredients
2 cups Romaine (chopped)1/2 cup Spinach (fresh) (optional)1/4 cup Walnuts1/4 cup Feta Cheese1/4 cup Dried Cranberries2T. Butter1 Medium Granny Smith Apple (diced)2 tsp. Sugar (appox)1tsp. Cinnamon2 T of your favorite Balsamic Vinaigrette
Directions
Preheat oven to 300 degrees.
Soften Butter and mix with Walnuts until coated.
Mix Cinnamon and Sugar together and add to Walnuts. Stir until coated.
Place Walnuts on a cookie try and put in oven for 15-20 minutes, giving them a stir halfway .
In a mixing bowl add Romaine, Spinach, Feta, Cranberries, Apple, and cooled Walnuts.
Toss with dressing and serve.

    Sounds great! My kids will love it! I will omit the butter and sugar though. They also love the crunch of iceberg lettuce, so I will add that in there as well. - 2/11/10
