Mayacoba Bean, Mushroom & Oxtail Stew

Ingredients
2lb Mayacoba (yellow) Beans10 medium celery stalks, chopped8 large carrots, chopped1 medium yellow onion1T garlic powder1T dried parsley * Beef Bone Marrow (1/4oz marrow, not bone), 2 oz 6 Portobello Mushroom Caps or 4C baby portobellos roughly chopped
Directions
Soak the beans overnight. Chop the veggies. Put everything except the mushrooms into a TEN quart pot (I did it in an 8Q pot and it was touch and go there for a while). When it comes to a boil, reduce to a simmer, stirring every 10 minutes or so.
50 minutes into the simmer, add the mushrooms and put the lid back and turn off the heat. Wait another 15 minutes; the mushrooms will be chewy and juussst right!
