Linda's Tomato and Lentil soup

Ingredients
two tetra packs of Campbell's organic vegetable brothtwo large tins whole chopped tomatoes1 tbsp basil2 leeks2 cloves garlic2 cups chopped carrots1 cup uncooked lentils
Directions
10 servings
saute garlic and leek
cook 1 cup (uncooked) lentils according to package directions
pour tomatoes, broth, leeks, cooked lentils, chopped carrots into slow cooker - add basil, parsley, dash of curry and other spices to taste.
cook in slow cooker for 6-8 hours.
if desired, serve on a handful of fresh spinach
or blend with spinach for a thicker soup.
