chicken with courgettes and leeks

Chicken breast, ginger, leeks, courgettes and chicken stock, vegetable oil
Cut chicken in strips, fry gently in the oil. Peel the ginger root, chop and add to the chicken. When the chicken is cooked through, add the sliced courgettes and leeksand the chicken stock. Simmer gently for 15 mins. I don't add salt to my cooking, but i do add loadsof black pepper.
