Delicious Pakistani Dhal

Ingredients

1 Cup dry lentils2 Cups water1 Cup vegetable broth3 cloves garlic crushed1/2 tsp peeled and chopped ginger root1/2 Can chopped tomato2 tsps curry powder1 tsp Tumeric1/4 tsp red chili powder1 tsp ground cumin1 tsp ground corriander2-3 Tbsp olive oilsalt/pepper to taste
Heat water in pot until boiling. Add lentils and boil for 1 minute, reduce heat to simmer. Simmer lentils until they resemble a thick paste.
Meanwhile, heat olive oil in pan, saute onion, garlic and ginger until soft.
Add curry, tumeric, chili, cumin, corriander and salt/pepper for 2-3 minutes.
Add tomatoes and saute for another 3-5 minutes.
Add fried spice mix into lential paste, stir and cook an additional 15-20 mins.
Serve as is or over Quinoa or basmai rice
