Raw Coconut Truffles

Ingredients
1 cup raw walnuts or other nuts1 cup unsweetened coconut plus 1/4 for rolling truffles1/4 cup raw agave syrup1/4 cup organic virgin coconut oil1/4 cup hemp protein powder1/3 cup organic cocoa powder1 teaspoon vanillapinch of unrefined salt
Directions
Place the nuts and coconut in a food processor and process until finely ground. Add the rest of the ingredients and process until smooth. Roll into 16 truffles and roll each in coconut. Truffles will be very soft so refrigerate them for a firmer texture.
