APPLE YOGURT CASSEROLE

Ingredients
1 lb. fruit (6 apples...can use other fruit)4 tbsp melted butter1 cup flour - I use whole wheat2 cups yogurt - I like greek; any yogurt will do3 eggs1/4 c. sugar - I use honeyI also add 1 tbsp tapioca pearls to ensure its not runny
Directions
make a paste with the melted butter/flour in a saucepan (low heat)
add beaten eggs and yogurt and honey (or sugar), then tapioca pearls
add sliced apples (peeled/cored), then pour mixture into glass pie dish or casserole pan. Bake at 350 (about a half hour) until the top is brown. Should look like a quiche without the crust. Its good cold for breakfast or warm for lunch/dinner.
