French Onion Soup

Ingredients
4 cups onion, sliced thin1 tbsp olive oil1 tsp celery seed2 cloves garlic, 1 minced fine, 1 reserved1 qt. beef broth1 tbsp cider or wine vinegar1 tsp Worchestershire sauce1/2 cup red wine (burgundy is best)4 slices french bread, toasted crisp2 oz gruyere cheese, shredded
Directions
Heat olive oil in a pot and add onions. Cook on medium low heat until onions are caramelized, about 30 minutes. Add garlic and cook another minute. Deglaze pan with red wine, stir and add broth, celery seed, vinegar and Worchestershire sauce. Simmer this for at least 45 minutes, until onions are very tender and flavors have melded. Adjust salt as necessary. To serve, take a piece of the toasted bread and rub with the reserved garlic clove. Place on top of a bowl of soup, top with 1/2 oz of shredded gruyere cheese and broil until brown and bubbly.
