Grandma Jeanette's Amazing German Red Cabbage

Ingredients
2 tablespoons butter, unsalted5 cups shredded (350g*) red cabbage1 cup sliced (91g*) green apples 1/3 cup apple cider vinegar 3 tablespoons water 1/4 cup splenda1/4 teaspoons salt **1/4 teaspoon black pepper 1/4 teaspoon ground cloves*I prefer to use my digital scale so I figured out how many calories were in "5c. shredded" and "1c. sliced" and did a quick proportion based on the number of calories in 100g of each plant to come up with those weights. It was about half an apple and half a small head of cabbage. Both portions looked small, but maybe I didn't slice/shred small enough?**The original recipe called for 2 1/4t salt which made each serving have 1,300mg+ of sodium.
Directions
Place butter, cabbage, apples, and splenda into a large pot. Pour in the vinegar and water, and season with salt, pepper, and clove.

Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer until the cabbage is tender, 1 1/2 to 2 hours.

***Prep time includes clean-up and hand milling the pepper.

    I liked this a lot. My one big!! mistake was a substitution ----I used Golden Delicious apple b/c we didn't have any green apples! It was killer sweet. I will have to retry as written to be fair. I noticed the original website for this used white sugar -- - 10/10/11
