Chicken & Broccoli Alfredo

Ingredients
6 oz. uncooked fettucine (or other noodlles)1 c. fresh broccoli, cut into bite-sized pieces2 tbsp. olive oil1 lb. boneless, skinless chicken breast, cubed1 10 3/4 oz can cream of mushroom soup, pref. 97% fat-free1/2 c. 1% milk1/2 c. shredded Parmesan cheese1/4 tsp ground pepper1/2 tsp salt
Directions
Cook fettucini to desired doneness, adding broccoli during the last 4 minutes of cooking time. Drain well. In a non-stick skillet over medium high heat, heat olive oil. When hot, add cubed raw chicken breast and cook thoroughly, until lightly browned, stirring often. Add soup, milk, cheese, salt & pepper, and mix thoroughly until bubbling. Add fettucini and broccoli, and cook through till hot, another few minutes, stirring constantly so it doesn't stick or burn. Serves 4.
