1.5 lbs Down Home Brand Hickory Smoked Sausage 1 chopped red onion4 Garlic cloves, minced1 Bell Pepper, Yellow sliced 1 Bell Pepper, Red sliced 1 Bell pepper, orange sliced 40 baby carrots chopped Cabbage, red, fresh, 1 head, large (about 5-1/2" dia) shredded Cabbage, fresh, 1 head, large (about 7" dia) shredded Kosher Salt, 3 tsp (to taste)Black Pepper, 2 tsp (to taste)
Saute sausage, onion, and garlic until sausage is done. Drain excess grease from sausage. Add all other ingredients plus two cups of water. Stir, put lid on and simmer until tender.
Should make 12 to 13 one cup servings. The sausage we used has plenty of spice so you do not need to add any. If you use a bland sausage, you may need to add some heat with cayenne or red pepper flakes.
