Tofu Patties

Ingredients
1 cup tofu2 Tablespoons chopped scallion1/4 cup veg broth1/4 cup bread crumbs2 Tablespoons minced nuts3 Tablespoons dry instant mashed potatoes1/4 tsp lemon juice
Directions
Combine all, mashing tofu thoroughly.

Form into patties and bake on a greased pan for 30 minutes.

    I did use oatmeal in place of breadcrumbs and a real potato instead of instant flakes. I would like to try again and add more spices - 6/13/07
