Curried Lentil Salad

3 cups Water1 1/2 cups French or brown lentils1 small red onion, thinly sliced8 cherry tomatoes, halved2 cups spinach or lettuce, roughly chopped1/4 cup cilantro, chopped1/4 cup mint leaves, choppedDressing: 1 T. curry powder2 T. red wine or balsamic vinegar2 T. olive oilSalt and pepper to taste
1. Cover the lentils with water, bring to a simmer and cook for 20 minutes, or until the lentils are soft (Take care not to let them get too soft and mushy). Remove from heat, drain, rinse and set aside to cool.
2. Put the cooled lentils in a large bowl and add the onion, tomatoes, spinach and herbs. Toss gently.
3. Whisk together the curry powder, vinegar and oil. Pour over the salad and toss gently. Season to taste with salt and pepper.
