Thai chicken breast and coconut milk w vegetables

Ingredients
coconut oilchicken breastoniongarlic clovescarrotscelerygreen peppermushroomsasparagus (or broccol)fish saucecoconut milklentils (optional)Madras curry paste(2 tbsp)cooked Jasmine rice
Directions
Stir fry the chicken breast with onions and garlic. Add vegetables in the order listed, stirring and frying (I used separate pans for the delicate veggies.)
Add 2 cans coconut milk (I had one can of premium and 2 cans lite - but would use 2 of lite if they were on hand.) and curry paste.
Serve 1C over 1/2 C rice for 8 servings.
