Lemon Pancakes

Ingredients
1/4 cup Carbalose Flour1/4 cup Spelt or Oat Flour1/4 cup Almond Flour2 teaspoons lemon juice1 teaspoon lemon zest2 teaspoons Baking Powder3 eggs2 Tablespoons butter, melted1 cup part skim ricotta1/3 cup Hood's Calorie Countdown Dairy Beverage, Skim1 teaspoon vanilla extract1/4 teaspoon almond extract
Directions
Mix all of the wet ingredients together in a medium size bowl.

Mix all of the dry ingredients. Then mix wet with dry.

Drop be heaping tablespoons onto a griddle and cook until bubbles form on top. Flip and continue cooking until done.
