IRISH SODA BREAD MUFFINS

Ingredients
2 1/4 CUP FLOUR1/2 CUP SPLENDA BAKING MIX PLUS 1 TBS DIVIDED2tsp BAKING POWDER1/2 tsp SALT1/4 tsp BAKING SODA1 EGG1 CUP BUTTERMILK1/2 CUP BUTTER, MELTED1/4 CUP VEGETABLE OIL3/4 CUP DRIED CURRANTS
Directions
In large bowl combine the flour 1/2c of splenda, baking powder, salt,and baking soda. In another bowl beat egg buttermilk, butter, and oil. Stir into dry ingredientsjust until moistened. Fold in currants.
Fill greased muffin cups 3/4 full. Sprinkle with remaining Splenda. Bake qt 400 degrees for 15 minutes before removing from pan to wire rack. Serve warm. Yield: 1 dozen
