1 lb 14 oz yukon gold potatoes, washed and quartered2 tbsp saltwater to cover2 tbsp light spreadable butter1 cup skim milk
place potatoes in pot with salt and cover with water. Bring to boil and boil until tender (15-20 minutes). Drain. Mash with milk and butter. Add pepper to taste. Makes 9 servings (1/2 cup)
