Ingredients
All ingredients should be fresh:1 Medium red sweet pepper1 Medium green sweet pepper1 Large summer squash1 Large onion3 Medium red ripe tomatoes1 clove of garlic1 Medium eggplantOlive oil, just for cooking
Directions
Make little cubes of all the vegetables, just slicing them, unpeeled. They should be fried with a little bit of olive oil. Each one has different cooking-times so cooking them separately would be a good choice. However, if you want to cook them all at the same time it'll be ok.
It's a perfect with fried chicken or fish, regardless it could be eaten as kind of salad.
Just put all the fried cubes in a plate or bowl and serve them :-)
