Asian Style Dirty Rice

1 lb ground turkey1 cup uncooked rice (or two cooked)1 sweet pepper, red, orange or yellow1 cup fresh broccoli, chopped1/2 cup frozen peas2 cloves garlic, minced3 tablespoons low sodium soy sauce
Cook rice according to package direction.
Brown ground turkey in a nonstick pan and then set aside.
Add oil to pan over med-high heat. add garlic, peppers and broccoli and stir fry until just tender. add turkey back in and frozen peas. then add rice and soy sauce. cook until heated through, just a minute or two.
makes 4 generous servings, but could definitely be stretched to more.
