Shrimp Minute Rice Risotto

1 cup chopped onion2 cup chicken broth1 cup skim milk2 cup minute rice0.25 cup parmesan cheese1.5 cup cooked shrimpAbout 2 cups chopped veggies (ie mushrooms, peppers, celery)0.25 cup white wine (optional, if using add a handful more rice or subtract 0.25 cup broth)2 tbsp olive oil1 tbsp sesame oil (optional)1 tsp oregano1 tsp basil0.5 tsp cayenne pepper
1) Add olive oil and onion to pan, cook until translucent.
2) Add 2 cups shopped veggies, sesame oil if using, & spices. Cook 5 min.
3) Stir in broth, milk, and wine if using.
4) Bring to a boil over medium heat.
5) Stir in 2 cup minute rice & simmer for 5 min over low heat.
6) Stir in 0.25 cup parmesan. Let stand 5 min.
Makes 4 servings.
