Egg Plant Pizza - vegetarian style

Ingredients
I eggplant - approximately 1 1/4 pound unpeeled1/2 cup classico tomato and basil spaghetti sauce1 cup Mozzarella Cheese part skim milk16 slices of mushroom - fresh4 tbsp. of chopped onions - fresh1 cup of sliced zucchini - freshprepare all ingredients - cut eggplant lengthwise into 4 equal pieces. Place eggplant on a cookie sheet and cover each piece with sauce and then layer on the veggies like you would build a pizza - 4 slices mushroom each, 1 tbsp onion each, 1/4 cup cheese each and 1/4 cup zucchini each
Directions
Bake in 400 degree oven for 8 minutes - broil for toasty brown cheese an additional 4 minutes.
