Gyro rice side

Ingredients
1/2 cup of brown rice1/2 cup of white rice1/2 medium onion, chopped1/2 medium green pepper, chopped1/2 can of tomatoes (with juice)
Directions
* Prepare the rice according to the package directions.
* While the rice is cooking, saute the onions, peppers and tomatoes until the peppers are tender-crisp, the onions are translucent and everything is heated throughout.
* Combine the rice and veggies and serve.

Can top with a dollop of sour cream or tzatziki sauce, if desired.

    For years I've been looking for something good to make with gyros. This recipe works out perfect! It adds variety to the rice; yet doesn't over power the gyros' flavors. And it’s simple! I also threw some of the rice on the Gyro; made one minor change, sliced and mashed some of my own tomatoes - 3/9/16
