WILD RICE W/SHRIMP & MUSHROOMS

2 1/2 cups chicken broth1 1/2 cups wild rice, rinsed1/2 tsp salt2 tbsp (1/4 stick) Promise Fat Free Margarine1/2 cup finely chopped onion1/2 cup finely chopped celery1 cup sliced mushrooms1 cup cooked small shrimp1/2 cup chopped fresh parsley
Bring broth to boil in 2-quart saucepan over high heat. Stir in rice and salt. Reduce heat to medium-low, cover and simmer until rice is tender and all liquid is absorbed, about 50 minutes.
Meanwhile, melt butter in large skillet over medium-high heat. Add onion and celery and sauté 5 minutes. Reduce heat to medium, add mushrooms and cook until tender, stirring frequently, about 8 minutes. Add shrimp and cook until heated through, 1 to 2 minutes. Add parsley. Stir into cooked rice and serve immediately. Makes 5 1-cup servings.
