parslied potatoes

Ingredients
6 med. red potatoes apx. 1Lb. Washed and quartered1med.white onion or vidalia chopped1 garlic clove minced1 cup chicken broth1cup chopped parsley1/2 tsp cracked peppercorns
Directions
wash potatoes and quarter them (leave skin on)
set aside.
Heat skillet with 1 tbs oil saute the chopped onion and garlic for 5 min.Add broth and 3/4 of the parsley mix well
bring to a boil.
place potatoes in a single layer in skillet,reduce heat let simmer for 10 min or until tender.
Remove potatoes with slotted spoon place in serving bowl add the cracked pepper to the skillet and stir then pour sauce over potatoes and serve.
