Pesto Chicken Pizza

Ingredients
* Ricotta Cheese, part skim milk, .5 cup * Pesto Sauce, 2 tbsp * Chicken Breast, no skin, 5 ounces * Mozzarella Cheese, part skim milk, 1 cup * Pizza Crust Dough, .75 lbs * Basil, 4 tbsp * Garlic, 2 cloves * Tomato slices, 8, optional
Directions
Grill or pan fry chicken. Shred or chop and set aside.

Roll out crust.

Mix ricotta, pesto and garlic together. Spread over crust.

Chop basil and sprinkle on pizza. Place mozzarella on pizza.

Add chicken to pizza.

Bake at 425 degrees until cheese is melted and crust is crispy, 15-20 minutes.

Serve with fresh slices of tomato, optional.
