Ingredients
Crust:1/2 cup crisco shortening1 1/3 cup flour1/2 tsp salt3 tbsp cold waterFilling:4 oz american cheese6 large eggs1 cup of 2% milk1/2 tsp salt1 tsp parsley1 can of spinach, drained in a strainer
Directions
Crust:

In a large bowl, use a pastry cutter to blend flour, crisco and water. When mixture is blended, roll out on a well floured surface.

Place in pie plate. Make sure the crust over hange the edges slightly to allow for shrinkage. Cut 4 small holes in bottom of crust and bake empty shell for 10 minutes at 450.

Filling:

Allow crust to cool a few minutes. Turn oven down to 375.

Shred cheese over the bottom of crust. Spred evenly the strained spinach over the cheese.

Whip together the eggs, milk, salt and parsley. Pour over the spinach.

Bake 40 to 60 minutes. Quich is dome when knife comes out clean but the center still giggles a little when you shake the plate.

Let stand for 5 - 10 minutes. Center will firm the rest of the way upon standing. (Overcooking will cause curdeling of ingredients.)
