Creamy Basil & Red Pepper Pasta

2 cups penne pasta, uncooked 4 oz. fat free cream cheese, softened 1/4 cup fat free milk 1 jar (7 oz.) roasted red peppers, well drained 1 tbsp fresh basil leaves 4 tsp 100% grated parmesan cheese 1 lb. boneless skinless chicken breasts, cut into bite-sized pieces
Cook pasta as directed on package.
Meanwhile, place cream cheese, milk, red peppers, basil and Parmesan cheese in blender container; cover. Blend until smooth; set aside.
Spray large skillet with cooking spray.
Add chicken; cook on medium-high heat 3 minutes, stirring frequently.
Stir in cream cheese mixture.
Reduce heat to medium; cook 5 minutes or until heated through, stirring frequently.
Drain pasta. Add to chicken mixture in pan; stir gently until well blended

This is really really good. I only had tofutti low/no fat cream cheese, and it worked great. Last summer I froze basil leaves in between paper towels in a container. These worked great. I also used whole wheat penne and some shells leftover. Adding to my list of favorites. Yum. - 2/23/12

I have looked at, printed and saved several recipes, but this is the first one I have made. I took the advice of others and added some garlic, red peper flakes and cut up a few mushrooms. This was wonderful. Even my husband who automatically says anything good for you will be bad liked it. - 3/23/11

This was a good recipe. My husband and I ate it for 3 meals. I added a can of 98% fat free cream of mushroom soup and a half a cup of milk to the sauce to make it creamier. I also added a chopped onion and a clove of garlic as I was cooking the chicken. Onions gave it a good flavor. Very nice! - 3/20/10

Wow! This was wonderful and easy to make. I was a skeptical with the whole 'blender' thing, but drug mine out. Well worth it! I didn't have fresh basil so had to use dried. Next time I'll make sure I have fresh basil!! My husband and kids loved it. Made more than 4 servings, more like 6. - 6/16/09

This was UNBELIEVABLE! My boyfriend is so-so about red peppers and spice but even he thought it was really good. The sauce is so creamy. I used half a box (8 oz) of ziti w/lines to make this and kept the amount of ingredients in the sauce the same. It made 2 huge servings w/480 cals! GREAT! - 6/9/09
