Crockpot Cabbage/Ground Turkey Stew

Ingredients
1 chopped head of cabbage (or as much as you can fit in!)1 (28 ounce) can crushed tomatoes 1 large onion, chopped 1 garlic clove, minced1 pound ground turkey or beef, browned and drained 3 tablespoons brown sugar 2 tablespoons lemon juice 6 cups beef stock 1 teaspoon salt 1 teaspoon black pepper 1/4 cup red wine (optional)
Directions
Place all the ingredients in a large crockpot (mine is 5 1/2 quart), placing the meat on top. Cook 5 -6 hours on low! Sprinkle with lowfat cheese, if desired! (I like the Mexican Blend)

    This was pretty good. I have a divided stock pot, so made brown rice in the other side--it was great to have with the main dish. I did drain the liquid, reduced it a bit and thickened it a little with some corn starch. Great and lasts for quite awhile for just 2 people. Several days dinner! - 3/11/11

    Like everyone else - I substituted something. Didn't have ground turkey or hamburger - so I used canned chicken (1 large can) - also put some brown rice and a package of spinach. My husband LOVED IT! Thanks....... - 1/21/11

    I was looking for something like the "pigs in the blankets" my mom has always loved and this was great and easy. It was a little salty from the beef stock even though I used the reduced sodium version so I probably won't add the salt next time. Thanks! - 6/11/08
