Steak Tartar

Ingredients
Directions
1.5 lbs. ground beef for tartar (ask butcher to prepare since quality cut and lean meat required and not regular ground beef)1 tsp. minced garlic2 tsp. soy sauce2 tbsp. freshly chopped coriander (cilantro)1 tbsp. Dijon mustard1 tbsp. olive oil2 tbsp. freshly chopped chives1 tsp. tobasco sauce or equivalentcapers2 tsp. chopped dried tomatoes (those that are sold in glass container in oil) (optional)Salt and pepper
Mix all ingredients together. Adjust Tabasco, salt, pepper to taste.
If you have molds, e.g. to make small hamburgers, sauce sized ceramic container, bakery molds of your choice etc., use this to form nicely-shaped portion. If not, manually prepared portions work just as well, if not less fancy.
Note that portions are not meant to be huge!
Served with fresh quality crusty bread or small crust bread slices that were toasted in oven.
