Bread, Ken's Cracked Wheat (Bread Machine)

Ingredients
1 1/4 cup + 1 TBSP Water2 TBSP Vegetable Oil3 cups Better for Bread Flour3/4 cup Cracked Wheat1 1/2 tsp Salt2 TBSP Sugar2 1/4 tsp Active Dry Yeast
Directions
Bring water to a boil. Place cracked wheat in small mixing bowl and pour water over it; stir. Before using cool to 80 degrees F. for bread machine method or 120 degrees for mixer method. Have all other ingredients at room temp.

Place ingredients in pan in the order listed. Select the MEDIUM/normal crust cycle. (These measurements are for a medium size loaf). Do not use delay timer. Check dough consistency after 5 minutes of kneading. The dough should be a soft, tacky ball. If it is dry and stiff, add water 1/2 - 1 TBSP at a time. If it is too wet and sticky, add 1 TBSP flour at a time. Remove bread when cycle is finished; cool. Makes 10 slices.
