WW Chicken Fried Rice

Ingredients
1 cup jasmine rice (2 cups cooked)1 lb chicken breast cubed into bite size pieces2 cloves garlic, minced.5 cup carrots chopped.5 cup frozen peas3 tbsps low sodium soy sauce4 egg whites
Directions
Cook rice according to package directions. In the meantime, add egg whites to non-stick pan and scramble until done. remove from pan and set aside. add evoo and garlic over medium high heat and saute about 1 minute. Add chicken and carrots and cook until chicken is browned, about 6 minutes. When rice is done add to pan with peas and soy sauce and cook until heated through, about 1 minute. Makes 4 generous servings or about 6 1 cup servings.
