Wholemeal Cheddar Cheese Biscuits

1 cup plain wholemeal flour2 tablespoons wholemeal self-raising flour1/2 teaspoon salt1 teaspoon cayenne pepper125 grams butter, softened2 tablespoons grated parmesan125 grams grated light cheddar cheese2 tablespoons lemon juice
1: Sift dry ingredients, rub in butter and grated cheeses and mix to a soft dough with the lemon juice
2: Shape into a roll about 38cms (15 inches) long, wrap in greaseproof paper and then aluminium foil and refrigerate for 3 hours
3: Cut into slices 5mm (1/4 inch) thick, place on greased oven tray and bake in 180oC oven for 20 minutes, turning half way to brown on both sides
