Zucchini Chicken Couscous

Ingredients
Cooking spray8 ounces boneless skinless chicken breast, cut into 1" cubes4 medium zucchini, sliced1 can (abt 14 oz) diced tomatoes1 can (abt 14 oz) fat free, reduced sodium chicken broth1 teaspoon italian seasoning1 cup uncooked whole wheat couscous
Directions
Spray large, deep skillet with cooking spray; heat over med-high heat. Cook and stir chicken 4 minutes or until lightly browned.

Add zucchini, tomatoes, broth and seasoning. Simmer, uncovered, 15 minutes, stirring occasionally.

Stir in couscous; remove from heat. Cover and let stand 7 minutes. Fluff with fork before serving.

Makes 4 servings of at LEAST 1 1/2 cups.

    I didn't use whole wheat couscous (used regular) and I used low sodium chicken broth & no salt tomatoes, but it still was wonderful! Will definitely make again! - 9/9/12

    This was a great lunch recipe. I used basil in it also and instead of chicken broth just used water (mostly because I did not have chicken broth.) I will be using this more because it is simple and easy and makes such a great and filling lunch. - 8/11/11

    I actually added a little salt to it, but I didn't add it in the recipe since alot of people are more concerned with sodium. I probably should be, too. lol... but, I love my flavor! :) Thanks for rating!!
