Low Fat Blueberry Bran Muffin

Ingredients
1 1/2 cups wheat bran1 cup nonfat or 1% milk (I used 1%)1/2 - 2/3 cup mashed banana (I used 2 bananas)1 egg2/3 cup brown sugar1/2 teaspoon vanilla extract1/2 cup all-purpose flour1/2 cup whole wheat flour1 teaspoon baking soda1 teaspoon baking powder1/2 teaspoon salt2 cup blueberries
Directions
Mix bran and milk, let sit 10 min. Mix egg, brown sugar and banana and mix in bran mixture.
Stir together dry ingredients (save 2t. of flour and mix into blueberries). Gently fold flour mixture into bran mixture and then mix in blueberries.
Bake at 375 for 15 - 20 min.

    This recipe was fantastic!! Very moist and tasty. My husband is not a big bran muffin fan, but he loved these. The only thing was that I had to bake it for 25 minutes, however I think that is likely due to my oven temperature being a little off. I will definitely make these again. - 10/1/11
