1/2 cup quinoa2 tsp olive oil6 cloves garlic, minced1/2 tsp chicken or vegetable oxo or 1/2 cup broth
Fry minced garlic in 2 teaspoons of olive oil in bottom of saucepan. Add 1/2 cup quinoa and lightly toast. Add 1/2 cup broth. Bring to boil then simmer, covered for 15 minutes. Cool 5 minutes then fluff with fork.
Makes 2 half cup servings (it expands as it cooks)
