Oven Fried Cajun Catfish

2 pounds catfish fillets3/4 cup yellow cornmeal1 teaspoon paprika1 teaspoon dried thyme1 teaspoon salt1/2 teaspoon celery seed1/2 teaspoon onion powder1/2 teaspoon garlic powder1/2 teaspoon ground black pepper1/2 cup skim milkcooking spray
1.Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and coat with cooking spray.
2.In a shallow dish, stir together the cornmeal, paprika, thyme, salt, celery seed, onion powder, garlic powder, and pepper. Dip the catfish fillets in milk, then place them into the cornmeal mixture and coat liberally; place on the greased baking sheet. Coat the tops of the fillets with cooking spray until wet.
3.Bake for 15 minutes in the preheated oven, or until fish is easily flaked with a fork.

This was a great alternative to frying my catfish! I'm not a big fan of thyme and may not use quite as much next time but it was great. My husband and I are both on diets and I served this with fat free cole slaw and 1/2 cup baked beans. We had our own little fish 'fry'! Thanx for the recipe! - 4/6/11

OMG, this is dabomb.com! I tried this recipe last night and am in love! I love catfish filets and usually grill them to keep it healthy and get upset because I can't have fried. The crust was absolutely wonderful.It came out crispy just like I like it! Will def be making again...probably tonight :) - 7/18/13
