Kickin' Quinoa Pilaf

1 cup dry quinoa, rinsed28 oz can stewed tomatoes2 cups water1 cup frozen corn1 large green zucchini, chopped1 large red pepper, chopped1 8oz pkg white button mushrooms, sliced1 can black beans, rinsed1/2 tsp onion powder1/4 tsp red pepper flakes1/4 tsp garlic powder1/4 tsp cumin6 tbsp grated Parmesan or Romano cheese
Place quinoa in a large saucepan with 2 cups water and stewed tomatoes. Bring to boil and simmer until liquid is almost absorbed, about 15 minutes. Add in black beans and all veggies and spices. Simmer until veggies are tender. Serve with a sprinkle of grated Parm on top. Play around with different veggies and spices to make it your own! It's hard to mess it up!
