Miso chicken with Quinoa

Ingredients
1/2 medium yellow onion2 cans Fred Meyer chicken broth (low fat, no MSG)3 cloves fresh garlic (diced)4 cups fresh broccoli (chopped)1 tablespoon white miso paste1/3 cup nutritional yeast1/2 tsp cayenne powder2 tsp Bragg's liquid aminos2 cups quinoa6 boneless, skinless chicken breasts
Directions
Preheat oven to 350.

Whisk all ingredients together, except the chicken, broccoli, and quinoa. Pour quinoa into a large casserole, lay chicken and broccoli on top, then pour sauce over this. Flip chicken breasts one or two times during cooking to prevent them from drying out.

Bake at 350 for 1 hour.

    Just put it in uncooked, and if you follow the directions, it will turn out great. Red quinoa may need extra time. I have yet to truly experiment with it. - 1/8/11
