Southwestern Chicken Black Bean Salad

Ingredients
2 medium scallions, chopped1/2 medium red pepper chopped (not added to ingredient list) optional1/2 medium bell pepper chopped (not added to ingredient list) optional15 oz. canned black beans, rinsed & drained1 15 oz. can sweet corn2 Tbsp. fresh lime juice1 Tbsp. corn oil8 oz. cooked and chopped skinless chicken breast2 Tbsp. reduced-sodium taco seasoning, mild or hot4 Tbsp. cilantro, fresh, chopped4 Tbsp. fat free sour cream
Directions
Combine scallions, peppers, beans, and corn; mix well. Add lime juice and oil; mix again. Add chicken, taco seasoning and cilantro; mix well. Top with sour cream and serve. Makes about 1 1/2 cups salad plus 1 Tbsp. sour cream per serving.

Notes: I add a lot more cilantro. I do not like peppers so I leave them out and did not include the nutrition information for them.

This is great served in the tiny baked Tostito shells.
