Chicken Satay

One chicken breast2 2/3 Tablespoons peanuts1/3 teaspoon curry powder4 teaspoons soy sauce, low sodium2 teaspoons sesame oilpinch of chili powder
Cut up chicken into bite size pieces. Place the pieces on a pan covered with foil. In a nonstick skillet, roast the peanuts over medium heat until fragrant. Let them cool a bit, then coarsely chop them.
Put the nuts in a bowl and add the remaining ingredients. Stir well and pour the sauce over the chicken pieces. Bake for about 10 minutes at 350 degrees. Garnish with cilantro if you like.
