Hearty Bean Leek Potato Soup

Ingredients
- 5 medium shallots- 1 bundle (4) leeks, roots and lower leaves- 2 med red potatoes- 1 root celeriac (1 cup)- 1 can chickpeas, thoroughly rinsed- 1 tbsp salt- garlic salt if desired- water
Directions
- chop and sautee scallions, move into crock pot
- add leeks to pan, sautee, move into crock pot
- chop potato finely, add to crock pot
- peel and chop celeriac, add to crock pot
- cover veggies in crock pot with water, cook on high 30 mins
- drain and rinse chickpeas, add to crock pot, cook on high an additional 30 minutes (may require more time, cook until vegetables are tender).
- using immersion blender, blend to a fine puree. Serve or portion out for lunches.
