Sauteed Clams

Ingredients
40 small clams3 TBSP olive oil3/4 c celery, diced1/2 c onion, chopped3 cloves garlic, chopped1 c dry white wine
Directions
Place clams in brine water (1/3 c salt in a gal of water) and let sit 15 minutes. Scrub clams.

Pour olive oil in a large sauce pan. Cook celery, onion and garlic over medium heat until onions are clear. Add wine. Bring mixture to a boil.

Place clams in mixture. Reduce heat, cover and simmer until clams open. Remove from heat. Serve at once.

    I just made this, using a Chardonnay, and it is delicious! I had dug the fresh clams a few days ago, and had them sitting in ocean water, so I skipped the brine water part of the recipe. - 4/14/20
